Extra Easy Ground Beef Casseroles

Italian Pasta Skillet
1 lb. ground beef, browned
4 cups pasta, uncooked(12 oz.)
1 can (28 oz.) spaghetti sauce
6 oz shredded mozzarella cheese
1/4 cup Parmesan Cheese 
Brown meat in a large skillet.  Add 3 ½  cups water, bring to a boil.  Stir in pasta, cover and simmer for 15 minutes or until pasta is tender.  Stir in spaghetti sauce and ½ of the mozzarella cheese.  Sprinkle the remaining cheeses; cover and cook for three minutes or until cheese is melted.  Serves 6-8.

Chili Macaroni
3/4 lb ground beef
½ onion, chopped or 1 Tbsp dried onion
1 can tomato sauce, plus 3 cans of water
2 Tbsp chili powder
1/4 tsp garlic powder
1/4 tsp pepper
3 cups uncooked macaroni
Brown meat, onion, and green pepper if desired.  Add tomato sauce, water, and seasonings.  Bring to a boil.  Stir in macaroni, Cover and reduce heat to simmer for 20-25 minutes.  If desired, top with grated cheese or serve with cornbread.  Serves 6.

Spaghetti
3/4 lb ground beef, browned
½ onion, chopped and cooked with meat
1 can tomato sauce
1 pkg spaghetti sauce mix
16 ounces canned tomatoes
1 cup water
Combine all ingredients and simmer for 5 to 10 minutes.  Serve over cooked noodles.  For noodles: bring a large pot of water to a boil, measure enough noodles to fill a canning jar ring(12 ounces), break into halves or thirds and add to water.  Boil noodles until tender (7-12 minutes) and drain. Toss with 1 Tbsp margarine or oil.  Serves 6.

Chile Spanish Rice
1 cups rice with 2 cups water
1 can chili
½ lb browned ground beef, if desired
1 medium onion, chopped or 2 Tbsp dried onion 
Combine all the ingredients and simmer for about 20 minutes, until rice is cooked.  Top with grated cheese or sour cream if desired.  Serves 4.

Stroganoff
3/4 lb ground beef, browned with ½ onion, chopped
1 can cream of mushroom soup
2 Tbsp catsup
½ cup sour cream
Brown the ground beef with onion, drain off fat.  Add soup to meat with catsup.  Cook until heated through.  Add a little milk if it is too thick.  Remove from heat and stir in sour cream.  Serve over rice, noodles, or potatoes.  Serves 6.

Curly Noodle Dinner
1/2 lb ground beef, browned with ½ onion, chopped
16 ounces canned stewed tomatoes
8 ounces frozen corn
2 pkgs ramen noodles(beef, pork, or oriental flavor)
In frypan or large pan, combine cooked meat, tomatoes, corn, seasoning packets, and 4 cups of water.  Bring to a boil.  Break noodles and stir in.  Cover and simmer for 10 minutes.  Serves 3-4.


Shepherd’s Pie
1 pound ground beef, browned with 1/2 onion, chopped (or 1 Tbsp dried onion)
8 oz frozen vegetable or 1 can vegetables, drained (corn or green beans are good)
1 can tomato sauce
1 tsp Worcestershire sauce
2 tsp chili powder
garlic powder to taste
6 servings mashed potatoes
Mix everything but potatoes together and warm thoroughly.  Place in casserole dish and top with mashed potatoes (and cheese if desired).  Bake uncovered 30 minutes at 350 degrees.
