Amber's Favorite Meals

Spinach Lasagna-Small Pan
½ lb ground beef, browned with chopped onion(if desired)
1 can tomato sauce
½  pkg spaghetti sauce mix
½ cups water
14 to 16 ounces canned tomatoes
dash ground red pepper (or cumin)
6 to 8 oz cottage cheese
1 egg
5 to 6 oz frozen chopped spinach (or chopped fresh spinach)
2 Tbsp Parmesan cheese
9 uncooked lasagna noodles
½ cup shredded mozzarella cheese
In a skillet or large saucepan, combine the meat, sauce mix, tomato sauce, water, tomatoes, and red pepper.  Bring to a boil, then remove from heat.  In a small bowl or carton, mix cottage cheese, egg, spinach, and Parmesan cheese.  Spread ½ cup of sauce in the bottom of a 9 x 9 pan.  Layer 3 noodles over sauce, and then half of the cottage cheese mixture.  Sprinkle with half of the cheese and top with ½ cup sauce.  Repeat the layers again, then top with remaining noodles and sauce.  Cover and bake at 375 degrees for 40 minutes.  Top with remaining cheese, recover loosely with foil, and let stand for 10-15 minutes.  Serves 4-6.


Beef and Broccoli
¾ lb ground beef
¼ tsp garlic powder
2 tsp sugar
1 tsp beef bouillon in 1 cup hot water
2 Tbsp soy sauce
1 lb frozen broccoli
2 Tbsp cornstarch in 2 cup cold water
Stir-fry beef, garlic, and sugar.  Stir in bouillon and soy sauce.  Cook covered 2 or 3 minutes.  Add broccoli and bring to a boil.  Stir, then cover and continue cooking 5 more minutes.  Pour cornstarch mixture into meat mixture.  Cook and stir 2-3 minutes more until thickened and bubbly.  Serve with hot cooked rice.  Serves 6-8.
Variations: Use 2 chicken breasts, cut into small pieces instead of beef.  Use frozen vegetable blends instead of broccoli (like oriental vegetables, or San Francisco blend veggies).



Easy Parmesan Chicken Breasts
Boneless Chicken Breasts
Bread Crumbs
Spaghetti Sauce
Grated Parmesan cheese
Rinse chicken breasts and coat with bread crumbs. Place on a lightly oiled baking pan and bake at 350 degrees for 20-30 minutes(depending on thickness of the chicken). Spread the spaghetti sauce over the chicken, sprinkle with cheese, and bake for another 5 to 10 minutes.


Chicken Alfredo
1 chicken breast, cooked and shredded
1 pkg Alfredo Sauce, mixed per instructions (or 3/4 to 1 cup Alfredo Sauce)
Chopped vegetables of your choice 
     (onions, mushrooms, peppers, carrots, spinach, and/or broccoli)
8 oz pasta, cooked
While pasta is cooking, saute the vegetables and add to the sauce with the chicken. Stir into the drained pasta. Serves 4.
